About the Buttercream...
At SOUTHSIDE SUGAR, my Signature icing is Swiss Meringue Buttercream (with a tiny twist), which is commonly used by professional pastry chefs due to its buttery flavor and smooth, velvety texture. It is smooth, light, and not too sweet. Made only with Swiss Meringue, butter & vanilla, it's known for its silky texture, smooth finish & ability to be flavored in various ways. Swiss Buttercream does not form a crust.
American Buttercream is sweeter, heavier, and is made with butter (often shortening), vanilla and powdered sugar. It can be slightly gritty depending on the amount of sugar and it develops a thin crust after it sits. American buttercream holds its shape well, making it great for piping and creating a crust on cakes.
I will offer either type of buttercream... and YES, I also offer fondant.
